Whole snapper wrapped in Banana leaves
ingredients
4 banana leaves, cleaned 3kg snapper, scaled and gutted 5cm piece of ginger, chopped 5cm piece of lemongrass, chopped 4 kaffir lime leaves ½ bunch coriander string
method 1. Lay the banana leaves out on a bench making sure to overlap them. Place the snapper on one end of the leaves. Put the ginger, lemongrass, lime leaves and coriander into the cavity of the fish. Roll the fish up neatly in the leaves, folding in the sides as you go. Tie up with string. 2. Place on a wire cooling rack and then onto a medium heat barbecue. Turn the heat down to low, close the lid and cook for 40 minutes turning the fish over after 20 minutes.
