Witlof leaves filled with crab salad
ingredients
250g cooked crab meat 3 chillis, finely chopped 2 spring onions, chopped on the diagonal 1 eschallot, finely chopped ½ cup of mint leaves ¼ cup of coriander leaves juice of 1 lime 1 tablespoon light soy sauce 1 tablespoon fish sauce 24 witlof leaves (2 witlof)
method Into a bowl, put the crab meat, chillis, spring onions, eschallot, mint and coriander leaves. Mix together the lime juice, soy and fish sauce and drizzle over the crab mixture. Toss and spoon into the witlof leaves. Serve immediately.
