Gingerbread
Reg's recipe for dark, moist treacle-flavoured gingerbread makes two generous-sized loaves. Just as well.
ingredients
250g unsalted butter 1 tablespoon dark marmalade 500g treacle 180g brown sugar 300ml milk ½ level teaspoon bicarbonate of soda 250g wholemeal plain flour 250g self-raising flour 2 teaspoons ground ginger 2 teaspoons mixed spice 60g sultanas 3 eggs, beaten
method Melt the butter in a saucepan.
Add the marmalade, treacle, sugar and milk and stir over a low heat until the sugar dissolves. Leave to cool.
Sift together the soda, flours and spices and add the sultanas.
Beat the eggs and gradually add to the flour mixture together with the butter mixture.
Pour into 2 lined 30cm x 12cm loaf tins and bake at 175°C for 1 hour.
Allow to cool. Slice to serve.
