Pears Belle Helene

ingredients
6 pears
200g sugar
600ml water
600ml white wine
1 strip of lemon peel
½ vanilla bean, split
75g cooking chocolate
150ml cream
vanilla ice cream, for serving


method
Into a saucepan, put the sugar, water, wine, peel and vanilla bean. Heat until the sugar has dissolved. Boil for 5 minutes.
Peel the pears, taking out the core at the base. Immerse the pears in the syrup adding more wine if necessary to cover them. Cover with the lid and poach for 20 minutes. Leave in the poaching liquid until ready to use.
To make the chocolate sauce, put the cream and chocolate into a saucepan and heat gently until the chocolate has melted. Beat together lightly with a whisk. Allow to cool before serving.
To serve, put the ice cream into a dish, sit the pear on top and pour the chocolate sauce over the pear.
