Noodle Salad Thai Style

In Renovation Rescue 2, Reg and the rest of the Our House team lent a hand to a family in need. Here, Reg cooks up a feast for the hungry workers.

ingredients
1kg hokkein noodles
1 bunch shallots, cut on the diagonal
½kg carrots, julienned
500g bean shoots
500g green beans, cut on the diagonal
500g peanuts, roasted and chopped
3 green mangoes, peeled and grated
2 cups of coriander leaves, plus extra for garnish
1 cup Thai basil leaves
Piece ginger, grated
2 red chillis, chopped finely
2 green chillis, chopped finely
250ml (1 cup) fresh lime juice
1 teaspoon grated lime zest
2 tablespoons brown sugar
6 tablespoons fish sauce
Sesame oil, to taste


method
Pour boiling water onto the noodles and leave for 5 minutes. Drain.

Put the noodles into a bowl and add the shallots, carrots, bean shoots, blanched green beans, peanuts, grated mango, coriander leaves and basil.

Mix the ginger, chillis, lime joice, zest, brown sugar and fish sauce. Add sesame oil to taste and toss through the salad.

Serve in takeaway containers with chop sticks.
