Tangerine and almond cake


In Renovation Rescue 2, Reg and the rest of the Our House team lent a hand to a family in need. Here, Reg cooks up a feast for the hungry workers.

ingredients
2 tangerines
6 eggs
250g castor sugar
250g ground almonds
1 teaspoon baking powder


method
Put the tangerines into a saucepan of water and bring to the boil. Simmer for two hours, then take the tangerines out of the water and allow to cool. Cut them in half and remove the seeds.

Put the rest of the tangerine, skin included, into a food processor and mix until smooth.

Preheat the oven to 175°C and line a 24cm springform cake tin with baking paper.

Lightly whisk the eggs and sugar in a mixing bowl. Fold in the tangerine mixture, almond meal and baking powder.

Pour the mixture into the cake tin and bake for about 40 minutes or until cooked.

Allow to cool in the tin. Sprinkle with icing sugar before serving.
