Chocolate salami

This delicious slice is perfect when visitors drop in for morning or afternoon tea. And the best thing about it is it's easy to make!

ingredients
300g caster sugar
400ml cold water
1 orange, rind grated
500g walnut pieces
150g cocoa, sifted
icing sugar, to dust


method
Grate the orange rind. Reg has a great tip for grating the orange — wrap your grater in cling wrap. The rind will grate easily and your grater will be a lot easier to clean.

Dissolve the sugar in the water and add the orange rind. Boil until syrupy. Take off the heat and add the cocoa and walnuts. Put back on the heat and cook until the mixture thickens and come together.

Allow to cool slightly. Dust two sheets of baking paper with icing sugar. Put half the mixture on each sheet and roll up into a sausage shape. Secure the ends. Put into the refrigerator to set for a couple of hours.

Slice thinly and serve with coffee.
