Blackberry Jelly

Your taste buds will be quivering in anticipation.

ingredients
450g blackberries
1 orange
375g white sugar
2 sachets of gelatin


method
This will become everyone's favourite dessert using this quick and easy preparation method.

Remove rind from orange and squeeze juice. Place the blackberries, 250ml (1 cup) water, orange rind, 75ml orange juice and sugar in a medium- size pan. Cover with a lid and bring to simmering point. Reduce heat and cook for 10 minutes.

Cool slightly. Puree the mixture and push through a fine sieve to extract the seeds of the fruit. Some of the pulp can be used. Follow the directions on the gelatin packet and add the dissolved gelatin to the blackberry mixture.

Pour into individual moulds and allow to set overnight in the refrigerator. Remove from the moulds and serve with fresh fruit or stewed apples with cream.
