The term "artisan" seems to be today's food buzz word. Described as craft-based as opposed to industry-based, the artisan's passion and pride is reflected in the quality and taste of their produce. Reg visits The Farmers Market at Fox Studios, one of several specialty markets around Sydney, to find out just how good it gets.
Managing Director of Twentieth Century Fox Film Pty Ltd, Managing Director Hoyts Theatrettes Ltd, Electronics Engineer, Bank Officer, Emergency Room Doctor and Ski Technician are just a few of the professions the faces of the The Farmers Market, Fox Studios have left behind, to pursue what they call "quality of life".
At The Farmers Market more than 35 growers display fresh local produce that meets the demands of consumers. Coming from as far a field as Bega and Tenterfield, Inverell and Leura, some even travel from Queensland each week to set up their stall and sell everything you could imagine located in the one easy and exciting location.
Dale and Eve Turnbull sell free range eggs; 55, 60, 65 & 70 grams. From Robertson in the Southern Highlands, they've been in business eight years. Started modestly, seven days a week with the husband and wife team, they've now got 5,000 free range hens. "95% of our customers are Sydney professional chefs. What we're selling is freshness. The rest is sold through the markets." They deliver direct to the chef's kitchen the day after they're laid.
Neil & Jenny Adams of Ellenia Farm in Mittagong produce raspberries fresh and in syrup, jams and jellies. Business is going well as Charles Sturt University recently announced findings that raspberries are very good for gastro. Their new syrup product is now so popular, they're struggling to keep up with demand.
The famous Eumundi Smokehouse is owned by David Kasmaroski of Eumundi, QLD. He produces handcrafted European continental sausages. In operation for 30 years, David is a third generation Polish/Russian sausage maker using methods handed down from his great grandfather. "Everything I make is made by hand; no cereals, binders, no preservatives and I stress NO WATER!. The Russian sausage is made with Stolychnaya Vodka." He also has a chilli salami and organic chickens. He soaks the chillies in Brown Brothers port in a vat for a month then puts them in the sausage and smokes for six weeks. The chickens are drug free, soaked in gin and smoked in juniper. He makes real bacon and ham that will last in your fridge up to 2 years as there's no water content.
